GF for broke college kids

Just like you, I'm in college and always broke. On top of that, I can't have gluten. Awesome.

I was just so tired of looking up recipes online or even in recipe books and finding that everything takes about 300 different ingredients that I don't have and would end up wasting because I can't use it all at once. That's ok, with creativity and desperation, I have a few tricks up my sleeve!!

This site will also be kind of a coping mechanism until I learn how to accept this new diagnosis (and how to have a balanced diet AND be on the go 24/7). If anyone has ANY tips, tricks, FEEL FREE TO CONTRIBUTE. I need all of the help I can get!!

Ooh, also, all of the recipes that I write/post (excludes reblogging) should be great if you live in high altitude. I'm making everything at 5,280 feet above sea level, so it should work fine for all of you that live up in the clouds.

Check this out if you or a friend is new to the gluten free concept

Crash course in Celiac disease

Is there anyone who developed - was not born with - a gluten allergy who can tell me how it started?

senpaichan:

Because lately I’m sick pretty much any time I eat, and after I developed lactose intolerance this past April a friend told me to watch out for gluten. I thought he was joking so I didn’t pay attention, but this whole being sick thing has been on and off since Thanksgiving and I’m a bit worried I should maybe think about scheduling an appointment with my doctor.

With me, it was sudden. I’m the only one in my entire family with anything like this. It was very sudden, I saw a new doctor for a physical, she noticed that I was vitamin D deficient 2 years ago, and told me about this disease. Then she asked if I had been having any bowel problems, to which I said yes, because I’ve always had horrible gas (which has been present since… being 9 or 10.) and lately had been… irregular I guess. So she told me to try this diet, tried it, and realized “holy cow, I feel BETTER”. I never knew I didn’t feel good to begin with!!! So I’ve been on this diet since June/July of this year, and with it, an allergy to wheat was discovered. I don’t know how I’ve been surviving, but I binged on wheat foods for 3 days and had an anaphylactic response. If I have just  tiny bit in an isolated situation, I’ll have hives for weeks. I’ve also had upper GI pain lately when I eat. I have other signs and symptoms too but I have no idea what’s going on most of the time. Contact your doctor :/ What do you mean by on and off?

Hi senpaichan! For...it was a slow gradual process. It didn’t start

  6. transveganzombie said: You developed it when you were young, most likely; introduced to it too early, and it got worse over time. That’s just my guess, I cannot know for sure without your medical history or knowledge of food history, etc.
